Criollos, Forasteros and Trinitarios are the three varieties of
cocoa, with their particular characteristics. The place and the
form in which each variety is cultivated gives it its specific character
and aroma.
Cocoa, which has been cultivated in various continents since the
Spanish brought it to Europe, is still faithful to its origins,
Latin America, and reserves its best fruit for it, the "fine-flavoured
cocoas", sought after by chocolate makers from around the world.
These exceptional cocoas are those that have traditionally been
mixed with more common ones.
In making OCUMARE, GUARANDA and GUYVAE,
we use these without mixtures. With SINGLE
ORIGIN you will be able to note the singular, extraordinary
qualities of these cocoas to their full extent. You will even notice
the difference between harvests, the years of which we note on the
label on each box, which makes these chocolates lively, unrepeatable
products.
